QUICK GRILLED CHICKEN PIZZA


Let me start of by sending out a BIG GOOD LUCK to all matrics. 

All home with matric student who are anxiously awaiting results must in a  total state of nerves, I know my home is. 

It's been a nervous day for everyone at home especially my son, so much so that I had to think of something quick but something that will fill 3 ravenous teens and 2 adults,so I thought why not a quick pizza without all the trimmings. That's how I put together this quick grilled chick pizza.


This recipe has no measurements as my head is all over the place so I'm going step by step and try my best to give you'll this recipe. 


First put flour in a bowl ( I would say about just a little more than quarter of a 2.5 kg bag of flour) add salt to taste, 1 package yeast, about 5 tsp sugar and 4 big dishing out spoons of oil, mix all together and then add warm milk to make a sticky dough ( I used about 1 ½ cups) add more flour to make a soft pliable pizza dough. Oil a large bowl and let rise for at least 1 hour, I left mine for 3 hours,once risen punch down and turn out onto a lightly floured surface then knead and spread out, put into a baking tray and spread out into desired thickness. Apply favorite pizza sauce, grilled chicken and top with cheese. Bake in preheat oven on 180⁰C for 25 to 30 minutes. Please check as times will change according to thickness of base. 


How I seasoned my chicken:


4 chicken fillets

5 heaped spoons of butter

1tsp jeera dhania powder

1tsp garum masala

¼tsp tumeric powder

1 tsp Kashmiri chilli powder

1tblsp oil


Melt together for 30 seconds in microwave and pour over chicken, make sure chicken is well coated


Grill chicken until fully cooked.


For pizza sauce:


2 tomatoes grated


Salt to taste

Pepper to taste

1 tsp origanum

1 tsp soy sauce

1 tsp sweet chili sauce

1 tblsp sugar


Add to saucepan and cook with about ½ cup water. Cook like chutney. 



Assembling:


Make dents in dough with fingers


Spread sauce all over



Add shredded chicken



Top with cheese



Bake



This recipe is so versatile, you can use your own pizza dough recipe, your own sauce and your own grilled chicken recipe.

This is a great idea for busy or the "I DON'T FEEL LIKE DOING ANYTHING" days.
