TIPS WHEN BAKING WITH CHOCOLATE BEFORE STARTING
1. Use good quality chocolate: The quality of chocolate you use will greatly affect the taste and texture of your dessert. Choose a high-quality chocolate with a high cocoa content for the best results.
2. Measure ingredients accurately: Baking is a science, so it's important to measure your ingredients accurately to ensure the right balance of flavors and textures.
3. Room temperature ingredients: For better mixing and blending, make sure your butter, eggs, and other ingredients are at room temperature before starting.
4. Don't overmix the batter: Over Mixing can lead to a dense and tough dessert. Mix just until the ingredients are combined and no streaks of flour remain.
5. Use parchment paper: Line your baking pans with parchment paper to prevent the dessert from sticking and to make cleanup easier.
6. Preheat your oven: Always preheat your oven before baking to ensure even cooking.
7. Use the right size pan: Using the correct size pan specified in the recipe is important for achieving the desired texture and baking time.
8. Don't overbake: Keep a close eye on your dessert while it bakes. Overbaking can result in a dry and crumbly texture. Start checking for doneness a few minutes before the recommended baking time.
9. Allow time to cool: Let your dessert cool completely before cutting or frosting. This allows it to set and prevents it from falling apart.
10. Add toppings or garnishes: Enhance the flavor and presentation of your chocolate dessert by adding toppings like whipped cream, chocolate shavings, fresh berries, or a dusting of powdered sugar.
11. Store properly: If you have leftovers, store your chocolate dessert in an airtight container to maintain its freshness.

DELIGHTFUL CHOCOLATE TART
Ingredients:
* 1 1/4 cups (300g) granulated sugar
* 1/2 cup (120ml) water
* 1/4 cup (60g) unsalted butter, cut into small pieces
* 1 cup (240ml) heavy cream
* 1/2 cup (120g) unsweetened chocolate, chopped
* 1/4 teaspoon salt
* 2 large eggs
* 1/2 cup (120g) all-purpose flour
* 1/2 cup (120g) unsalted butter, softened
* 1/4 cup (60g) granulated sugar
* 1 large egg yolk
* 1 tablespoon vanilla extract
* 1/2 teaspoon almond extract (optional)
Instructions:
1. Preheat your oven to 350°F (180°C). Place a rack in the center of the oven.
2. Make the chocolate filling: In a medium saucepan, combine the granulated sugar and water. Stir over medium heat until the sugar has dissolved. Bring the mixture to a boil and cook without stirring for about 5 minutes, or until the syrup reduces and turns a deep amber color.
3. Add the butter to the saucepan, and carefully stir until it has melted and the mixture is smooth. Be careful not to burn the syrup.
4. Gradually whisk in the heavy cream, and continue to cook until the mixture is smooth and has thickened slightly, about 2-3 minutes. Remove the saucepan from the heat.
5. Add the unsweetened chocolate, salt, and vanilla extract to the saucepan. Stir until the chocolate is completely melted and the filling is smooth. Set aside to cool slightly.
6. Make the crust: In a large mixing bowl, combine the all-purpose flour and softened butter. Use your fingers or a pastry cutter to mix the ingredients until the butter is evenly distributed and the mixture resembles coarse crumbs.
7. Add the granulated sugar, egg yolk, and almond extract to the bowl. Use a fork to mix the ingredients until the dough starts to come together.
8. Press the dough evenly into the bottom and up the sides of a 9-inch (23cm) tart pan with a removable bottom. Use your fingers or the back of a spoon to press the dough firmly against the bottom and sides of the pan.
9. Place the tart pan on a baking sheet, and bake in the preheated oven for 15-20 minutes, or until the crust is golden brown and set. Remove the crust from the oven and let it cool slightly.
10. Prepare the filling: Whisk the eggs into the chocolate filling until it is smooth. Pour the filling into the pre-baked tart shell and carefully transfer the baking sheet back to the oven.
11. Bake for 15-20 minutes, or until the filling is set and the top has formed a thin crust. Remove the tart from the oven and let it cool completely on a wire rack before serving.
12. To serve, run a knife around the edge of the tart to loosen it from the pan. Carefully remove the sides of the pan and transfer the tart to a serving plate. Slice into wedges and serve with whipped cream or ice cream, if desired.
