Choux paste Recipe:

Ingredients:
130g plain flour
100g butter
150ml water
150ml milk
4 eggs
Pinch of salt

Method:

1. In a saucepan, bring butter, milk, and water to a simmer. Be cautious not to let it boil.

2. Once simmering, remove from heat and swiftly add the plain flour and a pinch of salt. Mix vigorously until well combined.

3. Return the mixture to the stove and cook over low heat, stirring continuously until the dough forms a smooth ball and pulls away from the sides of the pan.

4. Remove the pan from heat and allow the mixture to cool.

5. Once cooled, add the eggs one at a time, beating well after each addition. Ensure the mixture is thoroughly combined and forms a smooth paste.

INGREDIENTS TO MAKE THE PROFITEROLES 

Choux paste

300ml double cream

50g icing sugar

250g dark chocolate

30g butter



METHOD 

Place choux paste into a piping bag with a plain nozzle and pipe out 2cm balls on a parchment lined baking sheet.

Dip index finger in cold water and press down the peaks on each ball

Bake for 10 minutes at 250⁰C then turn heat down to 180⁰C and bake for a further 20 minutes, remove from heat and take each ball and poke a small hole under to release steam and allow to cool.

Whisk cream and icing sugar until soft peaks from and then place in piping bag with small nozzle and pipe cream into holes created (you will feel and know when cream is filled).

Melt chocolate and butter over bain Mari or a metal bowl set over a pot of lightly simmering water and drizzle over profiteroles.
