Cubed chicken fillet meets a medley of flavors - butter, oil, finely chopped onion, cubed green pepper, ginger and garlic paste, Kashmiri chili powder, chicken spice, black pepper, cream (or milk), and a pinch of salt. DOUGH INGREDIENTS
2 cups flour
1 Packet instant yeast
1 egg
1 teaspoon salt
3 teaspoon sugar
3 tablespoon oil
+- ½ cup warm milk and water mixed
METHOD
Mix the above ingredients to form a soft dough. I use a little more than half a cup on the milk water to make a very soft dough, oil your hands so it is easier to work with dough and knead for 6 minutes
Cover in a lightly oiled bowland allow to rise for ½ hour
Knock down and divide into 20.
Roll each into a small disc. Add a teaspoon sauce on each disc and spread, then add 1 teaspoon filling. Close by pinching edges together to form a ball. Place on a lightly greased and lightly floured baking sheet,
Brush with garlic herb butter ( place some garlic and mixed herbs into some melted butter). Can be frozen at this point on the baking sheet first and once frozen pack in air tight container and keep frozen for a month.
Bake at 180c for about 15 to 20min, then grill to brown the tops.
MY CHICKEN FILLING FOR PIZZA BOMBS
INGREDIENTS
1 cup cubed chicken fillet
2 TBsp Butter and 1 TBsp oil
Small onion finely chopped
Green pepper cubed small
1 teaspoon ginger and garlic paste
1 teaspoon Kashmiri chilli powder
1 teaspoon chicken spice
½ teaspoon black pepper
2 tablespoons cream or milk
Salt to taste
METHOD
Heat butter and oil on medium low and add onions and ginger and garlic to saute,once onions start to soften add chicken, let chicken cook for about 2 to 3 minutes, stirring now and then add spices and mix,then add the milk mix until sauce is thick. Remove from heat and cool.
INGREDIENTS FOR SAUCE I USE
500ml tomato sauce
4 tablespoon oil
20 small cloves of garlic
1 medium onion chopped
Half teaspoon each dried origanum and basil.
1 teaspoon red chilli flakes
Salt to taste
Kashmiri Red chilli powder to taste
Paprika as needed
½ teaspoon sugar
½tin tomato puree
METHOD
In a pan, heat your oil and fry the onions and ginger and garlic on medium low heat,
Add the origanum, basil and chilli flakes. Mix and cook for a minute to release the flavours.
Add the tomatoes and some salt. Mix well and allow to cook on low heat till the tomatoes soften and the oil seperates. The tomatoes will begin to leave the sides of the pan. Add your sugar, paprika, red chilli powder and tomatoe puree. Cook on medium heat till the sauce is nice and thick.
Allow to cool completely then liquidise.
Any left over sauce can be frozen in an air tight container .Just defrost fully before using.
