EASY PEPPERMINT FRIDGE TART

INGREDIENTS

2 packets tennis biscuits
1 tin caramel treat
500ml fresh cream
 1 large slab frozen and grated or chopped peppermint chocolate ( i use a  frozen a slab of aero mint)
1tsp vanilla essence 

METHOD
Whisk cream until stiff peaks form,add in the vanilla essence,caramel treat and ¼ of the grated chocolate (reserve the rest in the freezer).gently fold until well incorporated.

In a lightly greased pyrex glass dish place tennis biscuits in a single layer.

Spread a layer of caramel cream over biscuits

Add a layer of biscuits over cream , followed by a layer of cream. 
Repeat layering until cream is finished. (THE LAST LAYER SHOULD BE CARAMEL CREAM).
Grate or chop frozen chocolate and sprinkle on top of cream. (I usually grate mine as I get more finer pieces so I cover cream better) If I have any biscuit left I crush them roughly and add to the top also.

Place cling wrap loosely over the top and allow to chill in the fridge for at least 1 hour.
