INGREDIENTS

200 g butter 
10 ml (2 tsp) vanilla essence 
125 ml (1/2 cup) icing sugar 
60 ml (1/4 cup) cornflour 
375 ml (11/½ cups) cake flour 
45 ml (3 Tbs) Nestlé Cocoa Powder

 CHOCOLATE CREAM

 50 g soft butter 
15 ml (1 Tbs) Nestlé Cocoa Powder 
2 ml (1/2 tsp) vanilla essence
 5 ml (1 tsp) instant coffee powder
 200 ml (1/4 cup) icing sugar 

METHOD 

Preheat oven to 180°C. Grease a baking tray and line with parchment. Melt butter in a large saucepan. Remove from the heat,Add essence,Sift in icing sugar, flour, cocoa flour. Beat with a wooden spoon to combine. Will be a soft,smooth,firm dough.
 Measure table spoonful of the mixture onto the tray. Flatten with a fork. Bake for 15-20 minutes until just starting to colour. Cool on a wire rack.
Sandwich together with Chocolate Cream.
 
CHOCOLATE CREAM
 Place butter into a bowl. Beat in cocoa, vanilla essence, coffee and icing sugar until smooth.
